When I was a kid I HATED sausage. Especially Bratwurst. At some point in my life I decided that I was going to have a love affair with sausage. Thing is, I never really LOVE the sausage I buy from the store for the exception of this chorizo. I grew up eating Cacique, Pork Chorizo mixed with refried beans. We’d eat it in a tortilla. Love it. I occasionally bring the mixture to a potluck at work (when that was still a thing).
Sausage you get in the store is designed for mass appeal. It makes sense. I’m not hating. I’m just saying that I feel like home made sausage could be better given time and patience.
